What is the difference between real goulash soup and the 'goulash' that tourists are looking for?
The original goulash (soup) is a rich soup ('gulyás leves') with potatoes, carrots, parsley and beef. It is eaten with bread and there is usually no second course.
"Goulash of the tourists" (in Hungarian "pörkölt") is juicy meat eaten with pasta or noodles. It is a second course, which means that it can be preceded by soup. It can be made with several types of meat: pork, beef and chicken. Interesting fact: if you use beef, add half a glass of red wine at the beginning.
